Papaya, beansprout and mangetout salad

+ Fixings:

- 175g mangetout

- 175g beansprouts

- 1 papaya , stripped, deseeded and cut into 3D squares

- juice 1 lime

- 25g unsalted peanuts

- little modest bunch basil leaves , torn

- little modest bunch mint leaves , slashed

+ Technique:

- Stage 1

Heat an enormous griddle over a high hotness. Add the mangetout, beansprouts and 1 tbsp water, and cook for 2-3 mins. Eliminate from the hotness and throw in the papaya and lime juice. Serve dispersed with the peanuts and spices.
